Browned Pressure Pork Loin Sammiches

I was just using up some stuff that I had laying around the house, in a pinch.  This turned out so good that my wife said, "Would you be able to reproduce this?"

The spice ratio is approximate, as I just put some in a small dish.

Ingredients:
Meat:
  • Pork Loin
  • 2 Tablespoons Olive Oil
  • 1 Onion
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Paprika
  • 1 Teaspoon Chili Powder
  • 1 Teaspoon Ground Cayenne Pepper
  • 1 Teaspoon Garlic Powder
Grilled Sandwich:
  • Light Rye Bread
  • Butter
  • Cheese (I used colby-jack)
Fixings:
  • Lettuce or Spinach
  • Mayo
  • Onions (fried of raw)
  • Pickles
  • Tomatoes
Instructions:

Cook Pork:
Put the olive oil in the pressure cooker and bring up to temperature for browning the meat.

Mix the salt and spices together, and then rub into pork tenderloin.  After doing this place the tenderloin into the pressure cooker and start browning all sides.

Once the loin is fully browned, add a splash of water, to help build pressure  Put the lid on the pressure cooker, and pressure cook for 10 minutes.  Once done, release pressure, and then slice the pork into silver dollars.

Grill Sandwich:
Preheat skillet over medium heat.

Assemble like you would a grilled cheese.  Butter the bread, and the put cheese and pork between the slices.  Put into skillet, and cook both sides until the cheese is melted and bread is browned.  I like to put a cast iron grill press on it.

Assemble sandwich using whatever fixings you like.
